The mochi is part of the large family of wagashis, traditional Japanese pastries which include, for example, yokans.
Mochi is a preparation based on sticky rice, it can take very diverse forms, we propose at KAN ICHI the daïfuku (see photo) where it is filled in its center with sweet Azuki red bean paste.
